Stuffed Cucumber Kimchi

Oi sobagi is my favorite summer kimchi. This delicious kimchi is enjoyed for its crunchy texture and refreshing taste. πŸ˜‹

The pickling cucumbers or slender firm Asian cucumbers are brined with boiling salt water to help them keep crunchy longer.
However, Oi sobagi is not meant for long term aging, so it is a seasonal kimchi made in a small batch.

In addition to regular kimchi seasoning, Buchu (garlic chives) are used in the stuffing. Once the cucumbers are brined, each one gets 4 slits lengthwise but held together at both ends. Then they are stuffed with chive seasoning in each slit.

Ema @hotpotsandchocolate was gracious to invite me to harvest garlic chives from her garden. Ones that have not flowered are still tender and edible.

Now that we are nearing the end of cucumber and chive season, enjoy them while they last!
