In the back is a plate of Korean rice balls called joomukbap, which literally means “fist rice” since the rice is shaped into balls by clenching the fist.
We used pickle juice and a pinch of salt to season the rice. The half of joomukbap are rolled in the crushed toasted sesame seeds and the other half in the roasted seaweed.
I would like to introduce the farmer Mike Lanigan @farmhousegarden_organics who was generous to invite me to harvest the overwintered spinach from his farm in Uxbridge. Although he is retired from being a vendor @villagemarketatwaldorf , he continues to farm and keeps a sanctuary for his cows.
When I said I needed green onions for my kimchi, he pulled them right off the field for me. This is what I call a true farm-to-jar experience.
Thanks Chef Doris @chefdorisfin for connecting us!
