It’s August, of course you do!⠀
I’m no chef but love to cook 👩‍🍳 ⠀
Riffing off a recipe from Round To Yours by Jackson & Levine-courgettes with mint & chilli, I’ve made a dent in the squash pile.⠀

Take 6 or more summer squash, patty pan or zukes and make ribbons with your veg peeler in to a colander. Sprinkle with salt, let stand.⠀
While you wait for the squash to sweat mix the dressing in a bowl:⠀
lemon juice ⠀
harissa spice mix ⠀
olive oil ⠀
All to taste!⠀
whisk dressing⠀

Squeeze the water from your squash ribbons over your compost making sure they are nice and squished before putting in your salad bowl with the dressing. Toss squash to coat and set aside in the fridge to soak up all the flavours. Before serving add chopped, fresh mint. ⠀
Will keep for a few days to have as salad, on pasta, on sandwiches and with cheese and crackers (because it’s August and you should have easy suppers!)⠀
